That handoff is exactly what's failing for wasabi. Most of the "wasabi" served abroad is dyed horseradish; the real plant — Wasabia japonica — needs cold mountain streams, clean water, and years of patient skill. As climate change warms the water and growers age out, supply shrinks while the global washoku boom sends demand soaring.
But the story isn't only decline. A Tokyo startup grows real wasabi inside shipping containers, with projects reaching Zurich and the U.S. A Shizuoka university spin-off distills wasabi into an award-winning gin. Researchers find a wasabi compound that eased Alzheimer's-type damage in mice. And high-schoolers in Azumino invent a wasabi cream daifuku. One root — a farm, a medicine, a dessert.
So which is the real treasure: the thing almost no one can make, or the one that finally reaches everyone?
