A Tokyo startup grows real wasabi inside shipping containers, with projects reaching Zurich and the U.S. A Shizuoka university spin-off distills wasabi into an award-winning gin. Researchers find a wasabi compound that eased Alzheimer's-type damage in mice. And high-schoolers in Azumino invent a wasabi cream daifuku. One root — a farm, a medicine, a dessert.

So which is the real treasure: the thing almost no one can make, or the one that finally reaches everyone?
