🌏 For our international listeners:
Welcome to The STEM Guys' Life Board Meeting.
Kurage finally had a proper taco — not the snack chip, but the real thing, at a bar-hosted taco party with homemade tortillas, multiple proteins, fresh sauces, and a cold Corona. His verdict: surprisingly, deeply satisfying.
The analysis: he thinks he might just be a fan of flavor complexity — dishes where several ingredients, textures, and aromas layer together, and you're unpacking them as you eat. That's exactly what international cuisine tends to deliver.
From there: a quick tour of underexplored cuisines. Peruvian food is world-class and nearly impossible to find in rural Japan. Jamaican food, surprisingly, is rice-based. Avocado is not bad — wasabi soy sauce is just the wrong vehicle for it.
The standout story: WBC in Miami, three years ago. Stuck outside the stadium after the game, no taxis, wandered into a burrito shop. Five dollars. Thirty centimeters of burrito, loaded with meat and cheese. Best and cheapest meal of the trip. The staff spoke only Spanish — Kurage got by with help from people nearby. America, in all its segmented, parallel-universe glory.
Final call to action: find a taco or burrito spot near you and just go. Japan may have fewer options than it should, but they exist — and they're worth seeking out.
